Spicy Garlic Noodles with Veggies

Ingredients:

  • 300g of rice noodles
  • 2 tablespoons of vegetable oil
  • 4 cloves of garlic, minced
  • 1 teaspoon of red chili flakes
  • 1 bell pepper, julienned
  • 1 cup of broccoli florets
  • 1 cup of snap peas
  • 4 tablespoons of gluten-free soy sauce
  • 2 tablespoons of sesame oil
  • 1 tablespoon of lime juice
  • Fresh cilantro for garnish

Kitchen Tools Needed:

Instructions:

  • Soak the rice noodles in warm water for 10 minutes until softened, then drain.
  • In a large pot, bring water to a boil and cook the rice noodles for 3-4 minutes until al dente. Drain and set aside.
  • Heat the vegetable oil in a wok over medium-high heat. Add minced garlic and red chili flakes, sauté until fragrant.
  • Add bell pepper, broccoli, and snap peas to the wok, stir-frying for about 5 minutes until vegetables are vibrant and tender-crisp.
  • Add the cooked noodles to the wok along with gluten-free soy sauce, sesame oil, and lime juice. Toss everything together until well mixed and heated through.
  • Remove from heat, garnish with fresh cilantro, and serve immediately.
