Garlic Roasted Carrots with Herbs

Ingredients:
- 1.5 kg of carrots
- 5 cloves of garlic
- 3 tablespoons of olive oil
- 2 teaspoons of dried thyme
- 2 teaspoons of dried oregano
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish

Instructions:
- Preheat the oven to 200°C (400°F).
- Wash and peel the carrots, then cut them into even-sized sticks.
- In a mixing bowl, combine the carrot sticks, minced garlic, olive oil, thyme, oregano, salt, and pepper. Toss well until the carrots are evenly coated with the oil and herbs.
- Spread the coated carrots evenly on a baking tray.
- Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through.
- Once done, take them out of the oven and let them cool slightly.
- Garnish with fresh parsley before serving.
