Almond-Crusted Vegetable Fritters

Ingredients:

  • 250g of grated zucchini
  • 100g of grated carrot
  • 150g of almond flour
  • 2 tablespoons of nutritional yeast
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt to taste
  • Pepper to taste
  • 300ml of water
  • 30ml of olive oil for frying

Kitchen Tools Needed:

  • mixing bowl
  • frying pan
  • spatula
  • grater

Instructions:

  • In a mixing bowl, combine the grated zucchini and grated carrot. Squeeze out excess moisture using a clean kitchen cloth.
  • Add the almond flour, nutritional yeast, garlic powder, onion powder, salt, and pepper to the bowl. Mix until well combined.
  • Gradually add water to the mixture until a thick batter forms. It should hold together but not be too runny.
  • Heat olive oil in a frying pan over medium heat.
  • Scoop a tablespoon of the mixture and form it into a small patty. Place it in the hot pan.
  • Cook each fritter for about 3-4 minutes on each side, or until golden brown.
  • Remove the fritters from the pan and place them on a paper towel to drain excess oil.
  • Repeat with the remaining mixture, adding more oil to the pan as necessary.
