Creamy Dairy-Free Apple Ice Cream

Ingredients:

  • 3 medium apples, peeled and diced
  • 2 tablespoons of maple syrup
  • 1 teaspoon of vanilla extract
  • 1 cup of coconut milk
  • 1 tablespoon of lemon juice
  • 1/4 teaspoon of cinnamon

Kitchen Tools Needed:

  • blender
  • mixing bowl
  • ice cream maker

Instructions:

  • In a mixing bowl, combine the diced apples with lemon juice and cinnamon. Set aside for 10 minutes to allow flavors to meld.
  • In a blender, add the coconut milk, maple syrup, and vanilla extract. Blend until smooth.
  • Add the apple mixture to the blender and pulse a few times until the apples are well incorporated but still chunky.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until creamy and smooth.
  • Transfer the ice cream to a container and freeze for at least 2 hours before serving.
