Almond-Crusted Vegetable Fritters

Ingredients:
- 250g of grated zucchini
- 100g of grated carrot
- 150g of almond flour
- 2 tablespoons of nutritional yeast
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt to taste
- Pepper to taste
- 300ml of water
- 30ml of olive oil for frying
Kitchen Tools Needed:

- frying pan
- spatula
- grater
Instructions:
- In a mixing bowl, combine the grated zucchini and grated carrot. Squeeze out excess moisture using a clean kitchen cloth.
- Add the almond flour, nutritional yeast, garlic powder, onion powder, salt, and pepper to the bowl. Mix until well combined.
- Gradually add water to the mixture until a thick batter forms. It should hold together but not be too runny.
- Heat olive oil in a frying pan over medium heat.
- Scoop a tablespoon of the mixture and form it into a small patty. Place it in the hot pan.
- Cook each fritter for about 3-4 minutes on each side, or until golden brown.
- Remove the fritters from the pan and place them on a paper towel to drain excess oil.
- Repeat with the remaining mixture, adding more oil to the pan as necessary.
