Creamy Dairy-Free Apple Ice Cream

Ingredients:
- 3 medium apples, peeled and diced
- 2 tablespoons of maple syrup
- 1 teaspoon of vanilla extract
- 1 cup of coconut milk
- 1 tablespoon of lemon juice
- 1/4 teaspoon of cinnamon

Instructions:
- In a mixing bowl, combine the diced apples with lemon juice and cinnamon. Set aside for 10 minutes to allow flavors to meld.
- In a blender, add the coconut milk, maple syrup, and vanilla extract. Blend until smooth.
- Add the apple mixture to the blender and pulse a few times until the apples are well incorporated but still chunky.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until creamy and smooth.
- Transfer the ice cream to a container and freeze for at least 2 hours before serving.
