Gluten-Free Chicken Hainanese Rice

Ingredients:
- 2 kg of whole chicken
- 1 tablespoon of salt
- 2 cups of jasmine rice
- 4 cups of chicken broth
- 1 tablespoon of ginger, minced
- 4 cloves of garlic, minced
- 2 tablespoons of sesame oil
- 1 cup of cucumbers, sliced
- 1 cup of cilantro, chopped
- 2 tablespoons of soy sauce (gluten-free)
- 2 tablespoons of chili sauce (optional)

Instructions:
- Clean and prepare the whole chicken by removing any excess fat and patting it dry with a towel.
- In a large pot, bring enough water to a boil to submerge the whole chicken. Add salt and ginger, then add the chicken to cook for about 30 minutes or until fully cooked.
- Once cooked, remove the chicken from the pot and let it rest. Reserve the chicken broth for cooking the rice.
- In a separate skillet, heat sesame oil over medium heat. Add garlic and sauté until fragrant.
- Add the rinsed jasmine rice to the skillet and stir to coat with oil and garlic. Cook for 2 minutes.
- Pour in 4 cups of the reserved chicken broth into the rice, cover with a lid, and bring to a boil. Lower heat and simmer for 15 minutes until rice is tender and liquid is absorbed.
- While the rice is cooking, chop the cooked chicken into serving pieces.
- Serve the rice on a plate topped with the chicken pieces, garnished with sliced cucumbers and chopped cilantro.
- Drizzle gluten-free soy sauce and chili sauce over the top if desired.
