Masala Dosa with Spiced Vegetable Filling

Ingredients:
- 250g of rice
- 100g of split urad dal
- 1 teaspoon of fenugreek seeds
- Salt to taste
- 5 medium potatoes
- 1 medium onion
- 2 green chilies
- 1 tablespoon of mustard seeds
- 1 teaspoon of turmeric powder
- 2 tablespoons of oil
- Fresh coriander leaves for garnish
Kitchen Tools Needed:

Instructions:
- Soak the rice, urad dal, and fenugreek seeds together in water for 4-6 hours. After soaking, drain the water and blend them into a smooth batter with a little water, then leave it to ferment overnight or for about 8 hours.
- Boil the potatoes until soft, then peel and mash them. In a pan, heat oil, add mustard seeds, and let them crackle. Then, add chopped onions, green chilies, and sauté until onions are translucent.
- Add the turmeric powder, mashed potatoes, and salt. Mix well and cook for a few minutes, then remove from the heat and stir in chopped coriander leaves.
- Heat a non-stick pan, and pour a ladleful of the fermented batter, spreading it into a thin circle. Drizzle a little oil around the edges and cook until the edges turn golden brown.
- Place a portion of the spiced potato filling in the center of the dosa, fold it over, and cook for a minute before serving hot.
