Vegan Collard Greens Delight

Ingredients:
- 500g of collard greens
- 2 tablespoons of olive oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 teaspoon of red pepper flakes
- 1 tablespoon of apple cider vinegar
- Salt to taste
- Pepper to taste

Instructions:
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in minced garlic and red pepper flakes; cook for another minute until fragrant.
- Add the collard greens to the pot and stir to combine with the onions and garlic.
- Pour in apple cider vinegar and season with salt and pepper.
- Cover the pot and let it cook for about 10-15 minutes, stirring occasionally, until the greens are tender.
- Remove from heat and adjust seasoning if necessary.
- Serve warm as a side dish or over rice.
